Urolithin-Rich Salmon Salad

Salmon provides anti-inflammatory omega-3s. Strawberries offer vitamin C. Walnuts contain ellagitannins that convert to urolithins A and B in the gut. Served on a bed of spinach for folate.

Ingredientes

  • 3 oz smoked salmon
  • 2 cups spinach, chopped
  • 1/2 cup strawberries, sliced
  • 2 tbsp chopped walnuts
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar

Instructions

  1. Break salmon into bite-sized pieces. Toss with spinach and strawberries.
  2. Add walnuts. Drizzle with olive oil and vinegar. Toss gently.
