Shakshuka

Ingredientes

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 (14 oz) can diced tomatoes
  • 2 eggs
  • Crumbled feta, garnish
  • Chopped parsley, garnish

Instructions

  1. Heat oil in a skillet over medium heat. Cook onion, pepper and garlic 3 minutes.
  2. Add tomatoes and simmer 5 minutes. Make 2 wells and crack an egg into each.
  3. Cover and cook 5 minutes until eggs are set. Garnish with feta and parsley.
