Ingredientes

  • 1 Tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 1 Tbsp tomato paste
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 cup dried lentils, rinsed
  • 4 cups vegetable broth
  • 1 14oz can diced tomatoes
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté 5 minutes until translucent.
  2. Add garlic, carrots, celery and cook another 3 minutes until fragrant.
  3. Stir in tomato paste, turmeric and cumin. Cook 1 minute more.
  4. Add lentils, vegetable broth, diced tomatoes and bay leaves. Bring to a boil.
  5. Reduce heat, cover and simmer 30-40 minutes until lentils are tender.
  6. Remove bay leaves. Season with salt and pepper.
