Lentil & Mushroom Stew

This savory, protein-packed stew contains lentils which are rich in folate to support healthy cells. Mushrooms add Vitamin D for immune function and bone health.

Ingredientes

  • 1 cup dry lentils
  • 1 onion, diced
  • 3 carrots, chopped
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 4 cups vegetable broth

Instructions

  1. Sauté onion, carrots, and mushrooms in a pot over medium heat for 5 minutes.
  2. Add garlic and thyme and cook 1 minute more.
  3. Add lentils and vegetable broth. Bring to a boil.
  4. Reduce to simmer and cook for 25 minutes until lentils are tender.
  5. Season with salt and pepper.
