Curcumin Cauliflower Fried Rice

Cauliflower rice tosses up quick and adds antioxidants. Turmeric, garlic and ginger boost curcumin absorption. Protein-packed eggs give staying power. A flavorful, vegetarian dinner!

Ingredientes

  • 2 cups riced cauliflower
  • 1 tbsp avocado oil
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1 tsp turmeric
  • 2 eggs, beaten
  • 2 tbsp soy sauce or tamari
  • Chopped scallions for garnish

Instructions

  1. Heat oil in a skillet over medium-high heat. Add shallot, garlic, mushrooms and ginger. Cook 2-3 minutes.
  2. Add cauliflower rice and cook 5 minutes more until tender.
  3. Push cauliflower to the side. Add eggs to the empty part of the pan and scramble until set.
  4. Stir in turmeric until fragrant, 1 minute.
  5. Add soy sauce and toss to coat. Top with scallions.
