Coconut Curry Chicken

Coconut milk provides healthy fats called MCTs while curry powder contains antioxidant compounds. Chicken supplies lean protein, iron and zinc. Cauliflower is packed with antioxidants.

Ingredientes

  • 1 lb boneless skinless chicken thighs, diced
  • 2 cups cauliflower florets
  • 1 onion, chopped
  • 1 tablespoon coconut oil
  • 2 cloves garlic, minced
  • 2 teaspoons curry powder
  • 1 (13.5 oz) can coconut milk
  • Chopped cilantro for garnish

Instructions

  1. In a skillet, sauté chicken and onions in oil for 5 minutes.
  2. Add garlic and curry powder, cook 1 minute more.
  3. Pour in coconut milk and cauliflower. Simmer for 10-15 minutes until chicken is cooked and cauliflower is tender.
  4. Garnish with cilantro.
