Ingredientes

  • 1/2 cup quinoa
  • 1/2 cup chickpeas
  • 1/2 cup diced roasted beets
  • 2 cups baby spinach
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • 1 tsp maple syrup
  • Pinch of cinnamon

Instructions

  1. Cook quinoa according to package directions.
  2. Divide between two bowls along with chickpeas, beets and spinach.
  3. In a small bowl, whisk together tahini, lemon juice, maple syrup and cinnamon.
  4. Drizzle dressing over bowls. Toss to coat.
