Ingredientes

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 3 cloves garlic, minced
  • 1 cup green lentils
  • 4 cups vegetable broth
  • 3 cups broccoli florets
  • 1 tsp oregano
  • Salt and pepper to taste

Instructions

  1. In a pot, heat olive oil over medium heat. Add onion and carrot. Cook 5 minutes.
  2. Add garlic and cook 1 minute more. Stir in lentils.
  3. Add broth and broccoli. Bring to a boil then reduce heat. Simmer 20 minutes.
  4. Season with oregano, salt and pepper before serving.
