Baked Salmon with Blueberry Salsa

This baked salmon is topped with a unique salsa made with blueberries, tomato, onion, lime, and cilantro. Salmon provides omega-3s for heart and brain health. Blueberries are packed with antioxidants. Onion and lime add immune-boosting vitamin C.

Ingredientes

  • 2 (6 oz) salmon fillets
  • 1/2 cup blueberries
  • 1/2 cup diced tomato
  • 1/4 cup diced red onion
  • 2 tbsp chopped cilantro
  • 1 tbsp lime juice
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Place salmon fillets on a baking sheet and season with salt and pepper.
  3. Bake for 10-12 minutes until salmon flakes easily with a fork.
  4. In a bowl, gently mix blueberries, tomato, onion, cilantro, lime juice and olive oil.
  5. Top salmon with blueberry salsa and serve.
