Ingredientes

  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken thighs, cubed
  • 1 onion, chopped
  • 2 carrots, chopped
  • 3 cloves garlic, minced
  • 1 cup lentils
  • 6 cups chicken broth
  • 2 cups spinach
  • Salt and pepper to taste

Instructions

  1. Heat oil in a pot over medium heat. Cook chicken 5 minutes until browned.
  2. Add onion, carrot and garlic. Cook 5 minutes more.
  3. Stir in lentils and broth. Simmer 30 minutes.
  4. Mix in spinach until wilted. Season to taste.
