Ingredientes

  • 1 cup cooked brown rice
  • 1/2 cup black beans, rinsed and drained
  • 1/2 avocado, diced
  • 1/4 cup diced red onion
  • 1/4 cup diced red bell pepper
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon lime juice
  • 1/4 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine rice, black beans, avocado, onions and bell peppers.
  2. In a small bowl, stir together Greek yogurt, lime juice and cumin. Season with salt and pepper.
